Taco Pie (Casserole)

*Note: I am just going to start logging meals I make in this blog to help me remember ideas I find.


INGREDIENTS:

1lb ground beef

1/4 taco seasoning

4 eggs

2/3 cup heavy cream

1 cup shredded colby Jack cheese, divided

1/4 cup salsa


STEPS

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a skillet over medium heat, scramble the ground beef until no longer pink. Drain excess grease.

  3. Stir in the taco seasoning and then remove from heat. For 1lb of meat, I added 1/4 cup of taco seasoning and 2/3 cup of water and let it simmer 10-15 minutes.

  4. In a large bowl, whisk the 4 eggs and 2/3 cup of heavy whipping cream.

  5. Add in the beef, 1/2 cup of the Colby Jack cheese and the 1/4 cup of salsa.

  6. Stir until just combined and then pour into a greased pie pan. I used a 7x9 (11 cup) glass Pyrex dish. I did not grease it.

  7. Top with the remaining cheese and bake for 30-40 minutes. I added more cheese to cover the top the way I liked it.

  8. Top with whatever taco toppings.
